Then in the late 1800s, U.S. roller mills began stripping away the germ and bran to make shelf-stable “white flour.” But that convenience came at a cost. By the 1930s, Americans were so nutrient-deficient the government required mills to add back synthetic vitamins. Over 100 years of mass-produced refined flour has trained us to think stripped-down flour is normal. But we’re changing that. We are currently selling via porch pickups in the heart of the Hollygrove Carrollton neighborhood in New Orleans.
